3-4 boneless, skinless chicken breasts (600-800g)

Salt and pepper, to taste

1/2 cup honey (170g)

1/3 cup soy sauce (80ml)

1/3 cup onion, diced (50g)

1/4 cup ketchup (60g)

2 tablespoons vegetable oil (30ml)

4 garlic cloves, minced

3 teaspoons cornstarch dissolved in 1/4 cup water (15g cornstarch dissolved in 60ml water)

Sesame seeds & green onion for topping

Rice for serving

Season chicken breasts with salt and pepper and place them in the bottom of the Instant Pot.

In a small bowl, combine honey, soy sauce, onion, ketchup, vegetable oil, and garlic. Pour the mixture over the chicken in the Instant Pot.

Set the Instant Pot to the Meat setting (or on HIGH pressure for non-IP) and cook for 15 minutes. Once the timer goes off, quick release the pressure and remove the chicken from the pot. Leave the sauce in the pot.

In a small bowl, dissolve 3 teaspoons of cornstarch in 1/4 cup of water and pour it into the Instant Pot. Stir to combine with the sauce.

Push the Sauté button on the Instant Pot and cook the sauce for about 5 minutes, or until slightly thickened.

Cut the chicken into bite-sized pieces and return them to the pot. Toss with the sauce before serving.

Sprinkle with sesame seeds and green onions, and serve over rice.

To make this recipe spicier, you can add some red pepper flakes or hot sauce to the sauce mixture.

For a gluten-free version, you can use tamari or coconut aminos instead of soy sauce.

This recipe can also be made with boneless, skinless chicken thighs.

To make the chicken crispy, you can broil it in the oven for a few minutes after cooking in the Instant Pot.

Leftovers can be stored in the refrigerator for up to 4 days or in the freezer for up to 3 months.
