WHY THIS MINI MEATLOAF RECIPE IS SO GREAT?

These mini meatloaves are made with lean ground beef (or turkey) and are packed with flavor.

680g lean ground beef (or turkey)

1 1/2 teaspoons chili powder

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 egg, lightly beaten

Meatloaf Sauce:

80g light brown sugar

1/2 cup (120ml) ketchup

2 teaspoons Dijon mustard

1/4 teaspoon ground nutmeg

Directions:

Preheat your oven to 350 degrees F (175 degrees C).

In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, onion, 1 tablespoon of barbecue sauce, mustard, chili powder, garlic powder, salt, pepper, and egg. Mix well.

Divide the mixture among the 12 cups in a standard muffin tin, pressing the mixture down to fill the cup. Bake for 15 minutes.

In a small bowl, mix together all of the ingredients for the sauce.

Remove the meatloaf from the oven and use a paper towel to soak up any excess grease.

Spoon the meatloaf sauce over each mini meatloaf. Return to the oven for an additional 10-15 minutes, or until the meat is cooked through.

Serve with mashed potatoes and any extra sauce.

Notes:

For a healthier option, you can use ground turkey instead of beef.
