WHY THIS MINI MEATLOAF RECIPE IS SO GREAT?

680g lean ground beef (or turkey)
150g panko bread crumbs (or regular breadcrumbs)
1/2 cup (80g) onion, chopped
1 tablespoon barbecue sauce
1 tablespoon mustard
1/2 teaspoon garlic powder
1 1/2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 egg, lightly beaten
80g light brown sugar
1/2 cup (120ml) ketchup
2 teaspoons Dijon mustard
1/4 teaspoon ground nutmeg
Preheat your oven to 350 degrees F (175 degrees C).
In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, onion, 1 tablespoon of barbecue sauce, mustard, chili powder, garlic powder, salt, pepper, and egg. Mix well.
Divide the mixture among the 12 cups in a standard muffin tin, pressing the mixture down to fill the cup. Bake for 15 minutes.
In a small bowl, mix together all of the ingredients for the sauce.
Remove the meatloaf from the oven and use a paper towel to soak up any excess grease.
Spoon the meatloaf sauce over each mini meatloaf. Return to the oven for an additional 10-15 minutes, or until the meat is cooked through.
Serve with mashed potatoes and any extra sauce.
For a healthier option, you can use ground turkey instead of beef.
If you don’t have panko breadcrumbs, you can use regular breadcrumbs or even crushed crackers.
Make sure to press down the meat mixture firmly into the muffin tin cups to prevent the meatloaf from falling apart.
You can store the leftover meatloaf in the fridge for up to 3 days.
