Ingredients:

1/2 scant cup (approx. 80gr) vegetable oil (I used canola oil)

2 eggs, at room temperature

2 levelled c (250gr) all-purpose flour or light spelt flour (I mixed both)

1 c (250gr) plain yoghurt

1/2 c (100gr) white or unrefined cane sugar

1/2 teaspoon Vanilla essence

1 pinch salt

2 teaspoons baking powder

1-2 Lemon, zest

JAM GLAZE

3 tablespoons apricot or orange jam

Directions:

Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Put the rack in the centre of the oven.

Brush with butter a 9x5x2.5-inch loaf pan.

In a mixing bowl, add eggs, oil, sugar, vanilla essence, and lemon zest. Beat until well combined.

Add the yoghurt and beat again until well blended.

Add the baking powder, salt, and flour. Beat until well mixed.

Transfer the batter into the greased pan and spread it evenly.

Place it inside the preheated oven and bake for about 40 minutes or until a toothpick comes out clean after inserting it in the middle

Remove the cake from the oven and let it rest completely at room temperature.

Brush the top with your preferred glaze.

Serve and enjoy!
