Perfectly roasted chicken never misses the top spot of our favourite rotation. This Onion Roasted Chicken is a classic recipe with juicy chicken, carrots, potatoes, and an onion soup mix. Incredibly easy to throw together and crazy delicious! A complete meal in one pan that you can make in a breeze using only a few simple ingredients.

I love trying out new recipes, but nothing can complete the classics. It’s one of those books recipes for keeps. For me, there will be no other dish that can replace my good old roasted chicken and potatoes. A pretty familiar recipe that guarantees the best dinner that everyone around the table will devour. This recipe is a bit of a cheat as I use packets of onion soup mix. But these little packets perfectly enhance the classic flavour of roasted chicken. It’s not overpowering, it’s just right. The veggies are cooked with chicken, so they absorb all the goodness.

Ingredients

4 chicken thighs

4 chicken drumsticks

3 carrots, peeled and cut into chunks

5 potatoes, cut into chunks (I like to use a mix of russet, red, and Yukon gold potatoes)

1 ½ packet Onion Soup Mix

¼ c. olive oil

1 teaspoon garlic powder

How to make Onion Roasted Chicken

Step 1: Prepare the oven. Preheat it to 425 degrees.

Step 2: Place all the ingredients (chicken thighs, drumsticks, carrots, potatoes, packets of onion soup mix, olive oil, and garlic powder) in a large bowl or Ziploc bag. Mix well until the chicken, potatoes, and carrots are coated in the seasonings. Then, into a 9 x 13-inch pan, pour everything and spread in an even layer.

Step 3: Place the pan in the preheated oven and roast the chicken, potatoes, and carrots for about 45 minutes or until the carrots are completely cooked and the chicken juices run clear. I suggest basting for a few times while cooking for flavour.

Step 4: Remove from the oven when done and serve immediately. Enjoy!
