OATMEAL PEANUT BUTTER COOKIES

Ingredients:

¾ c all-purpose flour

½ tsp baking soda

¼ tsp baking powder

½ tsp salt

½ c butter softened

½ c peanut butter

½ c white sugar

½ c packed light brown sugar

1 Egg

1 tsp vanilla extract

1 c quick-cooking oats

3 tbsp butter, softened

1 c confectioners’ sugar

½ c smooth peanut butter

2 ½ tbsp heavy whipping cream

Directions:

Step 1: In a mixing bowl, add 1/2 cup of peanut butter, 1/2 cup butter, brown sugar, white sugar, vanilla. Beat until well combined.

Step 2: Add egg, then beat again until well mixed.

Step 3: In a separate mixing bowl, add baking powder, flour, salt, and baking soda. Whisk until well combined.

Step 4: Transfer dry ingredients into the bowl with the wet ingredients. Stir until well mixed.

Step 5: Add the oatmeal and stir until well mixed.

Step 6: Apply cooking spray in a baking sheet.

Step 7: Spoon the mixture and drop them onto the prepared baking sheet. Use a fork to press each ball to about 1/4-inch cookie dough.

Step 8: Place the baking sheet inside the oven and bake the cookies for 10 minutes at 350 degrees F.

Step 9: Remove the cookies from the oven and allow them to cool at room temperature.

For the Filling:

Step 1: In a mixing bowl, add peanut butter, confectioners’ sugar, and 3 tablespoons of butter. Beat until well blended.

Step 2: Top half of the cookies with the filling, then top them with the remaining cookies.
