I enjoy simple meals, especially during busy days. I have my favourite recipes that I have fun making all the time. Whenever I want a meatless dinner, my go-to is this delicious Mushroom Ravioli with Spinach. It is incredibly easy to throw together using only six simple ingredients. All it takes is thirty minutes, and I have a filling meal on my table.

This dish is packed with sauteed spinach, garlic, sun-dried tomatoes and combined with ravioli. For this recipe, you can use either baby portobellos, shiitake, oyster mushrooms, cremini, or button mushrooms. The colourful mixture of veggies and mushrooms in this recipe instantly captured my attention. I have the pickiest eaters, and they love everything about this amazing Mushroom Ravioli with Spinach.

For this recipe, I used store-bought ravioli filled with 4 cheese mixes. But feel free to use your preferred ravioli such as pesto-filled ravioli, cheese ravioli, spinach-filled ravioli, etc. If desired, you can also make ravioli from scratch. Either way, this dish is going to be a fantastic meal perfect for everybody!

Ingredients

1 tbsp olive oil

10 ounces ravioli (cheese ravioli, pesto-filled, etc.)

4 cloves garlic, minced

¼ c. sun-dried tomatoes, chopped

2 tbsp olive oil

5 ounces spinach, fresh

¼ tsp red pepper flakes

salt and pepper

10 ounces mushrooms (cremini, button mushrooms, or baby portobellos)

How to make Mushroom Ravioli with Spinach

Step 1: Following the package directions, cook the ravioli until al dente. Drain when done.

Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Once the oil is hot, add the chopped sun-dried tomatoes and sliced mushrooms. Cook for about 2 minutes, stirring. Then, add the fresh spinach along with the minced garlic, red pepper flakes. Cook further while stirring until the spinach has wilted.

Step 3: Add the cooked ravioli to the skillet along with 1 tbsp olive oil. Stir and gently reheat over medium-low heat. To taste, season with salt and pepper.
