I love this cookie recipe. This only needs three ingredients, and the best part is you can add your favourite mix-ins from chocolate chips, cacao nibs, chopped nuts, raisins, coconut flakes, flaxseed, vanilla, diced raspberries, dried cranberries, etc. These decadent chocolate banana cookies are perfect for breakfast, snacks, even dessert.

This simple cookie recipe is very versatile. I added cacao powder but you can omit it for a more traditional way. I love the cocoa powder in this recipe because this makes the cookies super chocolatey! For extra flavour and texture, I added chocolate chips and some nuts. These cookies hit all the right spots!

INGREDIENTS

1 c. of quick oats (you can use gluten-free oats if you have an allergy – note that some oats are contaminated with small traces of wheat)

2 very ripe large bananas

Optional mix-ins (chocolate chips, cacao nibs, chopped nuts, raisins, coconut flakes, flaxseed, vanilla, diced raspberries, dried cranberries, etc.)

2 small tablespoons of unsweetened cacao

HOW TO MAKE 3 INGREDIENT CHOCOLATE BANANA COOKIES

Step 1: Prepare the oven. Preheat it to 350 degrees. Using non-stick foil or parchment paper, line a baking sheet.

Step 2: In a bowl, mash 2 ripe bananas. Add 2 tablespoons unsweetened cacao powder and 1 c. of quick oats to the mashed bananas and mix well using a spoon until you have a cookie dough-like batter.

Step 3: Fold in your preferred mix-ins if adding them to the batter.

Step 4: On the prepared baking sheet, evenly place around 15 clumps of the cookie dough mixture. Flatten each mould using your hand to make cookie shapes.

Step 5: Place in the preheated oven and bake for about 10 to 15 minutes. Remove from the oven when done and serve the cookies warm. Enjoy!

TIPS:

For this recipe, you can omit the cacao powder. This makes the recipe more traditional and more versatile.
To prevent the batter from sticking to your hands, try rubbing a bit of olive oil on your fingers before shaping the cookies.
