GREEN CHILE CHEDDAR BISCUITS

These are some of my favourite biscuits. Light and fluffy with cheddar cheese and green chillies. I love these biscuits with a bowl of my preferred soup, stew, or chilli, but these green chile cheddar biscuits are a great snack idea, too! Open the biscuits up and slather some butter or jam on them and serve these amazing biscuits with your favourite freshly brewed coffee for breakfast or snack.

INGREDIENTS

5 tbsp cold butter

1 c. finely shredded cheddar cheese

2 c. all-purpose flour

¼ tsp baking soda

1 tbsp baking powder

1 tsp salt

1 c. cold buttermilk

½ tsp white pepper

Additional shredded cheddar for the top of biscuits

⅓ c. diced green chillies (rinsed well)

HOW TO MAKE GREEN CHILE CHEDDAR BISCUITS

Step 1: Prepare the oven. Preheat it to 425 degrees. Using parchment paper, line a cookie sheet.

Step 2: Place the flour, baking powder, baking soda, pepper, and salt. Mix using a whisk until combined.

Step 3: Into the flour mixture, add the diced cold butter, and mix using a pastry cutter until you have a mixture that resembles coarse crumbs. Now, add the buttermilk and beat until blended. Lastly, fold in the cheese and green chillies until just combined.

Step 4: To a lightly floured surface, transfer the dough and sprinkle around 2 tbsp flour. Start kneading the dough (about 5 to 6 times), then pat it into half-inch thick circle.

Step 5: Cut the dough using a 2-inch round biscuit cutter and put them on parchment paper, leaving about an inch space between the biscuits. You can rework the dough scraps and form them again, cutting more circles.

Step 6: Over the biscuits, sprinkle about 1 tsp shredded cheese. Place in the preheated oven and bake for about 15 to 18 minutes or until the biscuits are raised and golden brown.

Step 7: Serve these green chile cheddar biscuits warm with soup, stew, or chilli. Enjoy!
