Brownie and buckeye in one treat! This is such a heavenly dessert that is excellent for everyone. Made with only seven ingredients and in under an hour, these buckeye brownie cookies are sure easy to whip and super addicting! You’ll never think that these fudgy-chocolate brownies are made using a boxed brownie mix.
Ingredients
1 large egg
1 box fudge brownie mix (19.5 oz. or family size)
4 oz. cream cheese softened
1/4 c. butter melted
1 c. powdered sugar
4 oz. semi-sweet chocolate chips
1 c. creamy peanut butter
How to make Buckeye Brownie Cookies
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Mix the brownie mix, butter, cream cheese, and egg in a medium bowl until well blended. Onto an ungreased cookie sheet, scoop the dough to make about 24 cookies, smoothing the edges to create round cookies.
Step 3: Combine the powdered sugar and peanut butter in another bowl until well mixed. Into about 1-inch balls, shape the mixture, making sure you have one ball for each cookie. Set aside.
Step 4: Place in the preheated oven and bake the cookie dough for about 12 minutes. Make sure not to overcook or undercook the cookies.
Step 5: Lightly press a peanut butter ball into the middle of each cookie as soon as they come out of the oven. Allow the cookies to cool for about 5 minutes before transferring them to a wire rack to cool fully.
Step 6: In a microwavable bowl, melt 4 ounces of chocolate for about 30 seconds. Stir and melt for another 15 seconds or until the chocolate is completely melted.
Step 7: On top of each cookie, spoon about half tbsp of the melted chocolate, covering the peanut butter ball. Allow the chocolate to set.
Step 8: In an airtight container, store the buckeye brownie cookies.
