CHEESY GROUND BEEF AND RICE CASSEROLE

This casserole is the creamiest casserole you’ll ever make! It’s super easy to whip up using pantry-friendly ingredients. Make sure to give this cheesy ground beef and rice casserole a try very soon. I know you’ll love every bit of this!

Ingredients

3 tbsp butter, separated

1 pound ground beef, 85% lean

1 ¼ c. uncooked white long-grain rice, (not instant rice)

1.5 tsp Italian seasoning

Salt/Pepper

¾ c. onions, diced

2 ½ c. beef broth

1 tbsp garlic, minced

8 ounces sliced button mushrooms, washed

½ c. sour cream

½ c. milk, any kind

2 c. cheddar cheese, separated

10.5 ounces cream of mushroom soup

How to make Cheesy Ground Beef and Rice Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: In a large pot, cook the ground beef over medium-high heat until no longer pink. Stir in the salt, pepper, and Italian seasonings as the beef cooks.

Step 3: When done, drain the excess grease and transfer it to a plate. Tent the ground beef mixture with a foil.

Step 4: In the same pot, melt 2 tablespoons of butter. Once the butter has melted, add the diced onions to the pot and cook for about 5 minutes until tender. Then, add the garlic and continue to cook for another minute.

Step 5: Add the beef broth to the pot along with butter and rice. Stir well until incorporated. Bring this to a boil, then decrease to a simmer. Put the lid on and tightly cover the pot. Cook for additional 10 minutes.

Step 6: Remove the cover and add the mushrooms to the pot. Cover again and continue to cook for 5 to 10 minutes more. You can refer to the package direction for the exact cooking time of the rice. At this point, DO NOT STIR THE RICE.

Step 7: Turn the heat off, but leave the cover on. Let the casserole stand for about 10 minutes, undisturbed.

Step 8: To the pot, add the ground beef along with the cream of mushroom soup, milk, sour cream, and half of the cheese. Stir well until incorporated.

Step 9: To a lightly greased 9 x 13-inch casserole dish, transfer everything and top with the rest of the cheese.

Step 10: Tent the casserole and place it in the preheated oven. Bake for about 20 minutes until done.
