EASY CHICKEN STIR FRY

Veggies and chicken coated in a thick and flavour-packed sauce, this stir fry is another perfect addition to your menu rotation. It is super easy to make and ready in a snap! For a filling weeknight meal, pair this with rice or noodles.

Ingredients

1 pound boneless skinless chicken breast, cut into cubes

3 cloves garlic

½ c. onion, sliced

2 c. broccoli florets

3 tbsp peanut oil

2 sticks celery, diced

½ green bell pepper

½ red bell pepper

¾ c. baby carrots, quartered

White Pepper/Salt, to taste

Sauce:

¼ c. chicken broth

1 tbsp Sweet and Sour Sauce

3 tbsp soy sauce

1 tbsp Hoisin Sauce

1 tbsp Honey

2 tbsp Cornstarch + 2 tbsp water

1-2 pinches red pepper flakes, optional

¼ tsp sesame oil

Optional Garnishes:

Cashews, peanuts, green onions, sesame seeds, crunchy chow mein noodles

How to make Easy Chicken Stir Fry

Step 1: In a medium bowl, combine the cornstarch and water until well mixed. Then, add the rest of the sauce ingredients and mix well until blended. Set aside.

Step 2: To the hot peanut oil, cook the onions and garlic for about 1 minute over medium heat. Then, add the chicken and adjust the heat to medium-high heat. Continue to cook for another 2 minutes or until the chicken is almost half cooked.

Step 3: Next, add the broccoli and cook for 2 to 3 minutes more.

Step 4: To the chicken and broccoli, add the rest of the veggies and cook for additional 2 minutes.

Step 5: Pour in the sauce and simmer until thickened. Then, stir to coat the veggies.

Step 6: Once done, take the stir fry off the heat. Serve right away garnished with the Optional Garnishes. Enjoy!

Notes:

For this recipe, you can also add your favourite vegetables, such as kale, green beans, cauliflower, asparagus, snap peas, water chestnuts, and baby corn.

Swap the chicken with ground turkey, ground chicken, beef tips, or sausage.

If desired, you can add about 2 to 3 tbsp peanut butter, hot sauce, or hot paprika to the sauce.

This stir fry pairs perfectly with noodles or rice.
