This is my husband’s favourite – chicken cordon bleu casserole. Super easy to throw together using ingredients you can find in your pantry and ready in less than forty-five minutes. The best part about this amazing chicken dish is this is low carb!

Enjoy layers of chicken, ham, and Swiss cheese in a creamy Dijon sauce any time at home with this healthy casserole. Serve this with your favourite greens for an easy and quick meal that your entire family will ask for again and again!

Ingredients

4 ounces butter melted

6 c. shredded cooked chicken (from about 2 pounds chicken)

1 tbsp dijon mustard

6 ounces ham cut into bite-size pieces

6 ounces cream cheese softened

1-ounce lemon juice

5 ounces Swiss cheese

½ tsp salt

1 tbsp white wine (optional)

How to make low carb Chicken Cordon Bleu Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: In the bottom of a 9 x 13-inch baking dish, place the chicken and top with pieces of ham.

Step 3: Place the melted butter, softened cream cheese, white wine (if using), mustard, lemon juice, and salt in a large bowl with an electric mixer. Beat until you have a thick sauce, then spread this over the chicken and ham.

Step 4: On top of the sauce, lay the Swiss cheese slices.

Step 5: Place in the preheated oven and bake for about 30 to 40 minutes or until done. To get more golden and bubbly cheese, broil the casserole for about 2 minutes.

Notes:

Feel free to add a splash of dry white wine for extra flavour.

You can double the amount of sauce or add 1/4 c. chicken broth to the sauce if the shredded chicken is on the dry side. Mix the shredded chicken into the sauce before adding the toppings.

For this recipe, you can swap shredded chicken with chicken tenderloins. Cook the tenderloins, drain the liquid and then proceed with the recipe.
