3 tbsp olive oil
1 tbsp minced garlic
1 lb. baby yellow potatoes – quartered (or halved if they are already less than 1 inch in size
2-2 ½ lbs. top sirloin steak – trimmed of fat and cut into 2 ½-inch pieces
1 tsp dried thyme
1 tsp onion powder
1 tsp dried parsley
1 tsp dried oregano
salt and pepper to taste – (I use about 1 tsp salt and ¼ tsp black pepper)
fresh thyme or parsley for topping – (optional)
Add the potatoes, steak, garlic, seasonings, olive oil, salt, and pepper into a large mixing bowl. Toss everything until well mixed.
Fill each of the four 12×12-inch aluminium foil sheets with the mixture. Close each foil and seal.
Place them on top of the grill and cook for 10 minutes over high heat. You can also bake them for 20 minutes at 425 degrees F.
Sprinkle freshly chopped parsley on top.
Serve hot and enjoy!
