Oh, my! I have never been more satisfied in my life! These Baked Spinach Mushroom Quesadillas are just too perfect! I want you all to taste how delicious these are so, here is the recipe to it! Feel free to tweak it a bit to your preference. I am sure that you can do a lot to make this recipe even better! My only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! Have a beautiful day, friends, and I hope you are all well today. Ingredients:

4 tortillas (8 inches)

olive oil (optional, enough to lightly coat the tortillas)

1 c shredded mozzarella

1 c shredded cheddar

3 c roughly chopped spinach

8 ounces sliced mushrooms

Directions:

Prepare the oven and preheat to 200 degrees C or 400 degrees F.

In a heat-proof bowl, add the mushrooms. Place it inside the microwave and heat for about 3 minutes or until they become soft, then drain.

Brush a bit of olive oil on one side of each tortilla.

Arrange the prepared tortillas onto a baking sheet.

Sprinkle 1/2 of the cheeses over each tortilla.

Top each with spinach and mushrooms.

Sprinkle the remaining cheeses on top of the mushrooms. Fold each tortilla.

Place them inside the preheated oven and bake for about 6 minutes.

Turn the quesadillas over and bake the other side for 6 more minutes or until the cheese is melted completely.

Serve hot and enjoy!

Note:

Feel free to use a different kind of vegetable for this recipe.

You can use pre-sliced mushrooms as well.

You can use mozzarella and cheddar cheese for this recipe.
