Ingredients:
For the jackfruit:
2½ c young jackfruit
For the barbecue sauce:
2 c tomato puree
¼ c apple cider vinegar
¼ c pure maple syrup
2 tbsp molasses
1 tsp sea salt
1 tsp paprika
1 tsp onion powder
½ tsp garlic powder
½ tsp chilli powder
¼ tsp cumin
¼ tsp ground black pepper
⅛ tsp cayenne
2 garlic cloves minced
2 tsp olive oil
Dash of liquid smoke
Directions:
Place a saucepan on the stove and turn the heat to medium-low.
Add 2 tsp of oil and allow it to become hot.
Add the garlic and saute until aromatic.
Add the apple cider vinegar, tomato puree, molasses, maple syrup, paprika, onion powder, garlic powder, cumin, chilli powder, cayenne, salt, and pepper. Stir until well mixed.
Turn the heat up to high, then allow the mixture to boil.
Turn the heat down to medium-low, then simmer the mixture for about 30 minutes.
Remove the core of the jackfruit, then shred it into small pieces. Place them into a mixing bowl.
Pour the barbecue sauce over the jackfruit, then stir until well combined.
Cover the bowl, then place it inside the fridge to marinate for at least an hour.
Place a large skillet on the stove and turn the heat to medium-high.
Add 1 tbsp of safflower oil and allow it to become hot.
Add the jackfruit and cook for about 30 minutes or until done. Make sure to stir from time to time. Remove the skillet from the heat.
Serve with bun and your preferred toppings. Enjoy!
