Ingredients:

3/4 lb. penne pasta

1 c vodka

3 cloves garlic crushed

1 yellow onion medium, chopped

1/4 – 1/2 tsp chilli flakes (depending on how spicy you like it)

12-15 Roma tomatoes (depending on size), diced

1/4 c olive oil extra virgin

1 tsp dried oregano

1/2 c Parmesan cheese shredded

1/2 c heavy cream

Parsley or fresh oregano to garnish

Salt and freshly ground black pepper

Directions:

Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Place a large oven-safe skillet on the stove and turn the heat to medium.

Add olive oil and allow it to become hot.

Add the onions and sauté until soft.

Add the garlic, oregano, and chilli flakes. Sauté until aromatic.

Pour in the vodka and stir until well blended. Allow it to reduce its volume.

Place a pan on the stove and turn the heat to medium.

Add a bit of olive oil and allow it to become hot.

Slice the tomatoes into small pieces, then put them into the hot pan. Sauté for a few minutes until soft.

Cover the pan with a lid, then place it inside the oven and roast for about 1 hour and 30 minutes.

Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water.

Remove the roasted tomatoes from the oven, then transfer them into a blender. Pulse until pureed.

Add the tomato puree into the pan as well as the cream. Stir until well mixed and simmer for a few minutes.

Add salt, pepper, and grated cheese. Stir until well mixed.

Add the cooked pasta and toss until well coated by the delicious sauce.

Garnish with more cheese, pepper, and freshly chopped herbs.

Serve hot and enjoy!
