These Shrimp Quesadillas are superb! My only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! Oh, man, you are so in for a treat! As perfect as this recipe already is, feel free to add more ingredients if you prefer. I know that you can do a lot to make this recipe even better! Ingredients:
1 pound uncooked medium shrimp peeled and deveined
1 tbsp olive oil
1/2 c onion chopped
1/2 c bell pepper chopped
2 cloves garlic minced
2 tbsp taco seasoning or 1 tbsp chilli powder and 1/2 tsp EACH garlic powder, onion powder, dried oregano, paprika, ground cumin, salt, black pepper
1-2 c melting cheese mozzarella, cheddar, Mexican blend, or Monterey Jack
6-8 Medium flour tortillas
Directions:
Place a large skillet on the stove and turn the heat to medium.
Add 1 tbsp of oil and allow it to become hot.
Add the onion slices, garlic, and bell pepper. Saute for about a minute.
Add the shrimp and taco seasoning, then cook for about 2 minutes or until the shrimp turns pink.
Transfer the mixture into a mixing bowl. Use paper towels to wipe clean the skillet.
Add 1 tsp of olive oil and allow it to become hot.
Add the tortilla and sprinkle cheese on top.
Add 5 shrimp on top of the tortilla and sprinkle more cheese over. Fold it in half.
Cook each side of the tortilla for about 2 minutes or until they turn golden brown. Repeat the process with the rest of the ingredients.
Serve the Shrimp Quesadillas hot with salsa, sour cream, or guacamole. Enjoy!
