It’s almost the start of school, and I’ve been busy prepping the things the kids and I need. Being a full-time working mom is not easy but so rewarding. The one challenge I often get crazy about is stretching time. Thank goodness for this easy casserole recipe, getting dinner done is easy peasy! This recipe is, in fact, one of my family’s favourite dinner and it’s been one of my go-to especially on the busiest days as this casserole takes only minimal preparation but guarantee the best results every time!
Ingredients
2 green bell peppers, diced
1 1/2 pounds ground beef
1 1/2 c. rice
1 c. onions, chopped
1 teaspoon Cajun seasoning
3 cloves garlic, minced
1/4 teaspoon red pepper flakes
14.5 ounces can diced tomatoes
2 c. beef broth
3 teaspoons Worcestershire sauce
1 c. Pepper Jack cheese, shredded
2 c. sharp cheddar cheese, shredded
1/2 teaspoon pepper
How to make Stuffed Bell Pepper Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees. Grease with spray a 3-quart baking pan.
Step 2: Add the ground beef, onions, bell peppers, garlic, seasoning, pepper, and red pepper flakes in a large frying pan. Cook the ground beef until browned and the onions and peppers are tender. When done, drain the excess grease and transfer the mixture into the prepared baking dish.
Step 3: To the baking dish, add the Worcestershire sauce, diced tomatoes, rice, and beef broth. Stir well.
Step 4: Tent the baking dish, then place it in the preheated oven. Bake the casserole for about an hour or until the rice is tender.
Step 5: When done, take the casserole out of the oven. Remove the cover and top with the shredded cheese. Return to the oven and resume baking for another 5 to 10 minutes or until the cheese has melted and bubbly.
