Ingredients:

1 large zucchini

2 tablespoons olive oil

Kosher salt

Step 1: Prepare the oven and preheat to 107 degrees C or 225 degrees F.

Step 2: Line with silicone baking mats two large baking sheets.

Step 3: Use a mandolin to slice the zucchini.

Step 4: Put the zucchini slices in paper towels and press them to remove most of the liquid.

Step 5: Arrange the zucchini slices onto the lined baking sheet.

Step 6: Add olive oil to a small mixing bowl.

Step 7: Brush the zucchini slices with olive oil.

Step 8: Season the zucchini slices with salt.

Step 9: Place the baking sheet inside the preheated oven and bake for 2 hours or until done.

Step 10: Remove from the oven and allow them to cool at room temperature.

Step 11: Serve and enjoy!

Note:

Place any leftovers in an airtight container and put them inside the fridge. They can last up to 3 days.

Serve these chips with mayonnaise or ketchup.
