Oh, my! This incredible potato casserole is superb! I’m telling you; you have got to give this one a try! I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go! By the way, feel free to add more ingredients if you prefer. Enjoy!


6 large sweet potatoes

1 8 oz. crushed pineapple

2 eggs

3 tablespoons unsalted butter room temperature

½ teaspoon salt

2 tablespoons all-purpose flour

⅓ c white granulated sugar

1 teaspoon vanilla extract

Pecan Topping

2 c chopped pecans

1 c brown sugar

⅔ c all-purpose flour

6 tablespoons unsalted butter melted



Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Place a large pot with water on the stove. Turn the heat to high and allow the water to boil.

Step 3: Chop into big cuts the skinned sweet potatoes, then toss them into the hot water.

Step 4: Cover the pot and cook the potatoes until fork-tender.

Step 5: Drain and put the potatoes into a large mixing bowl.

Step 6: Add the rest of the ingredients over the potatoes and mash until well mixed.

Step 7: Transfer everything into a 13×9-inch baking dish and spread it evenly.

Step 8: In a small mixing bowl, add all the ingredients for the topping. Stir until well mixed.

Step 9: Sprinkle the topping over the mashed potatoes.

Step 10: Place the baking dish inside the preheated oven and bake for 20 minutes or until done.

Step 11: Serve and enjoy!
