Easy, kid-friendly, and delicious – you cannot go wrong with this meatloaf base casserole topped and packed with mashed potatoes with bacon and cheese. Three of the most loved and favourite in a casserole for a comforting meal.

Ingredients

1 1/2 lbs Ground Beef, (85/15)

1/4 yellow onion, finely chopped

2/3 c. seasoned dry breadcrumbs

1/3 c. whole milk

1 large Egg, lightly beaten

1/2 tsp Kosher salt

1/4 tsp coarse ground black pepper

2 lbs potatoes, peeled and cut into 1″ chunks

1/3 c. unsalted butter

1/2 c. whole milk

1 tsp kosher salt

1/4 tsp coarse ground black pepper

1/2 c. bacon bits, cooked and crumbled

1 c. cheddar cheese, shredded

How to make Loaded Potato Meatloaf Casserole

Step 1: Prepare the oven. Preheat it to 375 degrees.

Step 2: Gently mix the beef, onion, breadcrumbs, milk, egg, salt, and pepper in a large bowl. Then, transfer this into a 9 x 9-inch baking dish.

Step 3: Place inside the preheated oven and bake for about 15 minutes, uncovered. Take the meatloaf out of the oven and remove excess fat.

Step 4: Meanwhile, cook the potatoes in a pot with just enough water for about 15 minutes over high heat.

Step 5: Once the potatoes are tender, drain the water. Add the milk, butter, salt, and pepper, then mash until creamy.

Step 6: Spread the mashed potatoes over the meatloaf and top with cheese and bacon.

Step 7: Bake for 15 minutes more until the bacon is sizzling, the cheese is bubbling, and the mashed potatoes are a bit crispy.
