Ingredients
1 pound Chicken Breast cut into bite-size pieces
1 pound Smoked Sausage kielbasa, farmers sausage, garlic sausage, etc
1 pound Shrimp raw and shells removed (for more flavour left the tails on)
1 Onion diced
1 Green pepper diced
1 Hot pepper (jalapeno, serrano, scotch bonnet, habanero, etc) (optional)
3 ribs Celery diced
28 ounces diced tomatoes
3 teaspoons Garlic minced
2 cups Chicken broth
1 tablespoon Cajun spice or more if you prefer
1 teaspoon thyme
1 teaspoon Oregano
1 ⅓ cups Rice cooked
How to make Crockpot Gumbo with Sausage, Chicken, and Shrimp
Step 1: In a slow cooker, combine the chicken breasts, kielbasa, onion, green pepper, hot pepper, celery, tomatoes, garlic, chicken broth, cajun spice, and thyme.
Step 2: Cook, stirring hardly for about 6 to 7 hours on low.
Step 3: Lightly salt the shrimp in the last hour of cooking before adding them into the crockpot.
Step 4: Add the rice half hour before the end, stir, and cover the pot. Cook until the rice is just warmed through and took some of the flavours.
