Ingredients:

1 pound ground beef or turkey or chicken

1 tablespoon oil of choice

1 small onion diced

2-3 cloves garlic minced

1 small green bell pepper diced (optional)

1 (10 ounces) can Rotel tomatoes or 1 large tomato, chopped

1 (8 ounces) package cream cheese OR 1 c heavy cream

2 tbsp taco seasoning homemade or 1 packet

Salt and pepper to taste

1 (14.5) ounces can beef broth 1.5 c

Directions:

Place a large pot on the stove and turn the heat to medium-high.

Add 1 tbsp of oil and allow it to become hot.

Add the ground beef, garlic, and onion. Cook for about 7 minutes or until nicely brown.

Add the tomato slices, bell pepper, spices, and cream cheese. Stir until well blended. Cook for about 5 minutes or until the veggies are soft.

Add the beef broth and stir until well mixed. Turn the heat down to low, then allow the mixture to simmer for about 20 minutes or until thick.

Ladle the soup into serving bowls, then garnish each serving with sour cream, avocado, minced cilantro, jalapeno, shredded cheese, and lime.
