I will never get tired of recommending this recipe to my loved ones! It is just too perfect just to keep to myself. Ingredients:

2 pounds fingerling potatoes any variety

3 tablespoons olive oil

1 ½ c vegetable broth

3 tablespoons lemon juice

3 garlic cloves minced

1 tablespoon dried oregano

½ teaspoon salt or to taste

½ teaspoon pepper

Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Slice lengthwise your washed potatoes.

Arrange the slices onto a 12×17-inch baking sheet.

Sprinkle salt and pepper over the potato slices, then drizzle olive oil.

Toss everything until the potato slices are well coated.

Arrange them cut-side down, then place them inside the preheated oven. Bake for about 15 minutes or until they turn golden brown.

In a mixing bowl, add the vegetable broth, oregano, garlic, and lemon juice. Stir until well mixed.

Pour the mixture over the potatoes, then put them back inside the oven and bake for another 25 minutes.

Remove the potatoes from the oven, then flip them. Broil for another 5 minutes or until brown.

Garnish with freshly chopped parsley.

Serve and enjoy!

Notes:

Always use fresh potatoes for this recipe.

Slice the potatoes into four if they are large.
