KOREAN FRIED CHICKEN

Ingredients:

FOR WINGS

Vegetable oil

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon baking powder

1/2 teaspoon garlic powder

2 lb. chicken wings

1 tablespoon freshly grated ginger

1/2 cup cornstarch

FOR SAUCE

3 tablespoons butter

5 small dried red chilis, sliced

1 tablespoon freshly minced ginger

3 cloves garlic, minced

1/4 cup gochujang

2 tablespoons ketchup

1 tablespoon rice vinegar

1 tablespoon low-sodium soy sauce

1/4 cup honey

2 tablespoons packed brown sugar

FOR GARNISH

1/2 cup cocktail peanuts

1 tablespoon sesame seeds

1 green onion, sliced

Directions:

For the Wings:

Place a deep pot on the stove and turn the heat to medium-high.

Add 4 to 6 cups of oil and allow it to become hot.

In a mixing bowl, add garlic powder, baking powder, salt, and pepper. Whisk until well combined.

Use paper towels to pat dry the chicken wings. Rub grated ginger all over each chicken wing.

Coat each chicken wing with the seasonings.

Add the chicken wings into a large mixing bowl, then add cornstarch. Toss until well coated.

Add the chicken wings into the hot oil and cook for 15 minutes or until they turn golden brown.

Remove the chicken wings from the pot onto a clean plate lined with paper towels to drain any excess oil. Allow them to rest for a few minutes.

Turn the heat to 400 degrees F and allow the oil to become hot again.

Put the chicken wings back to the hot oil and cook for another 7 minutes or until crispy. Remove from the pot into a large bowl.

For the Sauce:

Place a saucepan on the stove and turn the heat to medium-low.

Add butter and allow it to melt.

Add ginger, garlic, and dried chilis. Saute until aromatic.

Add the ketchup, gochujang, soy sauce, and vinegar. Stir until well blended.

Add the brown sugar and honey. Stir and cook for a few minutes until the texture becomes thick.

Pour the sauce on top of the chicken wings and toss until well coated.

Add the peanuts and toss again until well mixed.

Sprinkle green onions and sesame seeds on top.

Serve and enjoy!
