Ingredients:

2 c espresso or strong coffee room temperature

1/4 c rum optional

6 large egg yolks room temperature

1/2 c granulated sugar

1 tsp vanilla extract

24 oz mascarpone cheese cold, 3 c

1 c heavy cream cold, divided

40-45 ladyfingers

1/4 c unsweetened cocoa powder

Directions:

To Brew the Coffee:

Prepare the coffee and brew, then allow it to cool completely.

To Cook the Egg Yolks:

Add 6 egg yolks and 1/2 cup of sugar into a microwavable bowl. Whisk until well blended.

Add 1/4 cup of heavy cream and whisk until well combined.

Place a saucepan on the stove and turn the heat to medium.

Add a bit of water and allow it to become hot.

Add the egg mixture and cook for 10 minutes or until done. Make sure to whisk from time to time.

Remove from the broiler and add 1 teaspoon of vanilla. Whisk until well blended and allow it to cool completely at room temperature.

Add about 3 cups of cold mascarpone cheese and stir until well combined.

In another mixing bowl, add the remaining heavy cream and beat until it forms stiff peaks.

Transfer the whipped heavy cream into the bowl with the egg mixture. Stir until well blended.

To Assemble:

Apply cooking spray in a 9×13-inch baking pan.

Add 1/2 of the ladyfingers into the bowl with the coffee mixture and make sure to coat each well.

Arrange the coated ladyfingers into the prepared baking pan.

Add 1/2 of the mascarpone on top of the ladyfingers and spread it evenly.

Repeat the process until all the ingredients and arranged in layers.

Sprinkle the sifted cocoa powder on top.

Cover the baking pan with plastic wrap, then place it inside the fridge to chill for at least 6 hours to overnight.

Serve and enjoy!
