225g unsalted butter, softened
225g caster sugar
225g self-rising flour
Zest of 2 lemons
1 teaspoon lemon extract/oil
For the drizzle topping:
Juice of 2 lemons
150g icing sugar
75g caster sugar
Prepare the oven and preheat to 160 degrees C or 320 degrees F.
Line with parchment papers two loaf pans and spread butter over each.
Add the caster sugar and butter into a stand mixer. Beat until well blended.
Add eggs gradually and beat until well combined.
In a mixing bowl, sift the self-rising flour, then add the lemon extract and lemon zest. Stir until well combined. Add milk if the texture becomes too thick.
Transfer the mixture into the prepared tin and spread it evenly.
Place it inside the preheated oven and bake for about 30 minutes.
Cover the baking tin with foil and bake for another 30 minutes or until a toothpick comes out clean after inserting it in the middle.
Meanwhile, in a mixing bowl, add caster sugars, icing, and lemon juice. Stir until well blended.
Remove the cake from the oven and drizzle the mixture on top.
Allow the cake to cool completely at room temperature.
