INSTANT POT COWBOY BEANS

Ingredients:

16 oz dried pinto beans

8 c water

1 tsp salt

1/2 lb ground beef

1/2 lb kielbasa, sliced

6 slices bacon, chopped

1 medium yellow or sweet onion, chopped

2 garlic cloves, minced

2/3 c water

1/2 c ketchup

1/2 c BBQ sauce

1/4 c molasses

1/4 c packed brown sugar

2 tbsp yellow mustard

1 tbsp apple cider vinegar

2 tsp Worcestershire sauce

2 tsp chilli powder, I like to use chipotle

1 tsp paprika

3/4 tsp liquid smoke

Add water, pinto beans, and salt into your Instant Pot. Stir until well mixed.

Cover and press the “Manual” button. Cook for about 25 minutes on a high setting.

Do a natural release, then transfer the beans into a colander. Drain well.

Press the “Saute” button on the pot, then apply cooking spray and allow it to become hot.

Add the kielbasa and ground beef. Cook until crumbly and brown. Press the “Cancel” button.

Remove the browned meat from the pot into a mixing bowl.

Discard any excess grease from the pot, then press the “Saute” button again.

Add the bacon and onion. Cook until brown and soft.

Add garlic and saute until aromatic. Press the “Cancel” button.

Discard about half of the grease.

Add water and scrape the bottom of the pot to get the brown bits.

Add the rest of the ingredients and stir until well mixed.

Put the meat and beans back in the pot, then stir until well combined.

Cover and press the “Manual” button again and cook for another 15 minutes or until done.

Add 1/4 of water and stir until well blended. Make sure to deglaze the bottom again.

Serve and enjoy!
