Ingredients:
1 1/2 pound hot breakfast sausage
1 small onion, chopped
1 stalk(s) celery, chopped
1 half, red bell pepper, chopped
1 1/4 cups uncooked jasmine rice or reg. long-grain rice
10 1/2 ounces
can cream of mushroom soup
2 cups chicken stock
3/4 cup shredded Colby jack cheese
Directions:
Step 1: Place a large skillet on the stove and turn the heat to medium-high.
Step 2: Add the sausage and cook for a few minutes until brown and crumbly.
Step 3: Discard accumulated grease from the skillet.
Step 4: Add the celery, onion, and bell pepper. Saute for about 5 minutes or until translucent.
Step 5: Add the uncooked rice and stir until well mixed.
Step 6: In a small mixing bowl, add the broth and soup. Stir until well combined, then pour it over the mixture in the skillet.
Step 7: Add the cheese and stir until well combined.
Step 8: Apply cooking spray on a 2 1/2-quart baking dish.
Step 9: Remove the skillet from the heat and transfer the mixture into the prepared baking dish.
Step 10: Cover the dish with tinfoil.
Step 11: Place the baking dish inside the oven and bake for 1 hour at 175 degrees C or 350 degrees F.
Step 12: Remove from the oven and allow it to cool for a few minutes.
Step 13: Serve and enjoy!
