Ingredients:
1 tablespoon bacon grease (or butter)
2 medium zucchini, chopped
1 small onion, chopped
1 large carrot, shredded
10 1/2 ounces can cream of mushroom soup
2 tablespoons heavy cream or milk
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 cup shredded sharp cheddar cheese
6 ounces box dry chicken stuffing mix
1 tablespoon butter, melted
Directions:
Place a skillet on the stove and turn the heat to medium.
Add bacon grease and allow it to become hot.
Add the carrot, onion, and zucchini. Saute for about 5 minutes or until soft.
Remove the skillet from the heat.
Add the soup, cream, cheese, garlic powder, and pepper. Stir until well mixed.
Add 3/4 of the stuffing mix, then stir until well mixed.
Apply cooking spray in a 9×9-inch baking dish.
Transfer everything into the prepared baking dish and spread it evenly.
In a mixing bowl, add the rest of the stuffing mix and melted butter. Stir until well mixed.
Sprinkle the mixture over the baking dish, then cover it with tinfoil.
Prepare the oven and preheat to 350 degrees F or 175 degrees C.
Place it inside the preheated oven and bake for about 25 minutes.
Remove the foil cover and bake for another 5 minutes.
Remove from the oven and allow it to cool at room temperature.
