Ingredients:

1 lemon cake mix I used Duncan Hines 16.5 ounce Lemon Supreme Signature Cake Mix

1 3.4 oz Jello Instant Lemon Pudding

4 Eggs

1 1/4 c 7-up or any lemon-lime drink

3/4 c vegetable oil

Pineapple Filling

1 20 oz can crushed pineapple, undrained

1 stick butter or margarine or 8 tbsp or 1/2 c

1 c sugar

2 Eggs

2 tbsp all-purpose flour

1 1/2 c coconut

In a mixing bowl, add all the ingredients to the cake. Beat until well mixed.

Apply cooking spray in two 8-inch cake pans.

Transfer the batter into the two prepared pans and spread it evenly.

Prepare the oven and preheat to 162 degrees C or 325 degrees F.

Place the pans inside the preheated oven and bake for about 40 minutes or until a toothpick comes out clean after inserting it in the middle.

Remove from the oven and allow them to cool at room temperature.

To Make the Pineapple Filling:

In a mixing bowl, add butter, eggs, pineapple, flour, and sugar. Beat until well combined.

Place a pan on the stove and turn the heat to medium.

Pour the mixture into the pan. Stir and cook for a few minutes until the texture becomes thick.

Remove the pan from the heat, then add the coconut. Stir until just mixed.

Spread the filling over the cakes.

Serve and enjoy!

Note:

Make sure to place any leftovers inside the fridge.
