Fabulously healthy Chicken, Zucchini, and Fresh Corn Burgers – a million better than your usual burger. This recipe is a must today and a treasure to keep for years to come!
Ingredients
Greek yoghurt sauce:
1 c. Greek yoghurt
2 tsp grated lemon zest
2 tbsp fresh lemon juice
2 garlic cloves minced
1 tbsp olive oil
½ tsp salt
Burgers:
1 pound ground chicken
1 medium zucchini coarsely chopped
1 ear fresh corn husks and silk removed and kernels cut from the cob
½ medium red bell pepper finely diced
3 green onions thinly sliced
1 large egg lightly beaten
½ c. panko bread crumbs
2 tbsp chopped cilantro
3 garlic cloves minced
1 tsp ground cumin
1 tsp ground coriander
1 tsp salt
½ tsp freshly ground black pepper about 3-4 tablespoons olive oil for searing
Tomato-Cucumber Relish:
1-pint cherry or grape tomatoes quartered
⅓ medium seedless English cucumber finely diced
2 green onions finely sliced
¼ c. finely chopped fresh cilantro
1 clove garlic minced
zest of 1 lemon
2 tbsp fresh lemon juice
Pinch of salt
How to make Chicken, Zucchini, and Fresh Corn Burgers
Step 1: In a small bowl, combine the Greek yoghurt sauce ingredients. Set in the fridge until ready to use.
Step 2: Prepare the oven. Preheat it to 425 degrees.
Step 3: Place the burger ingredients except for oil in a large bowl. Mix well until combined using your hands, then shape the mixture into patty sizes.
Step 4: In a large frying pan, pour enough oil to cover the bottom and heat over medium heat. Sear the burgers in the hot oil for about 2 minutes on each side until golden brown. To a king sheet, carefully transfer the seared burgers. Place in the preheated oven and bake for about 7 to 10 minutes until completely cooked.
Step 5: In the meantime, ready the tomato-cucumber relish. In a medium-sized bowl, place the tomato-cucumber relish ingredients, stirring gently until mixed.
Step 6: When done, remove the burgers from the oven and serve immediately with Homemade Flour Tortillas spread with a little hummus. You can also enjoy them with pita bread, basmati rice, mashed potatoes, pasta, etc.
