Ingredients:
1 lb chicken thighs cut into 1-inch chunks
1/3 c cornstarch
1/2 c canola oil
3 cloves garlic minced
1 tbsp ginger minced
1/2 tsp red pepper flakes
Sauce:
2 tbsp soy sauce
1/2 c honey
zest of one large lemon
1/2 lemon juiced
1/2 c water
1 tbsp cornstarch
Garnish:
green onions
sesame seeds
lemon zest
Directions:
Add the chicken thighs and cornstarch inside a large resealable bag. Shake the bag until the chicken thighs are well coated.
In a mixing bowl, add all the ingredients for the sauce. Whisk until well mixed.
Place a large pan on the stove and turn the heat to medium-high.
Add vegetable oil and allow it to become hot.
Add the chicken thighs and cook each side until golden brown.
Transfer the chicken thighs from the skillet onto a clean plate. Discard the rest of the oil and leave about 1 tbsp in the pan.
Add the ginger, garlic, and red pepper flakes. Saute until aromatic.
Put the chicken thighs back to the pan and toss until well combined.
Simmer for about a minute or until the sauce becomes thick.
Sprinkle sesame seeds and freshly chopped green onion on top.
Squeeze lemon zest over the chicken.
Serve hot with rice. Enjoy!
