SPINACH PIE (SPANAKOPITA) RECIPE

Ingredients:

3 tsp olive oil

1 onion, finely chopped (equivalent to about 3/4 c)

3 pkg (10 oz each) frozen chopped spinach, thawed and squeezed dry

3 Eggs

3 tbsp dried parsley

6 tsp dried dill

3/4 tsp salt

3/4 tsp pepper

12 oz feta cheese, crumbled (equivalent to about a heaping 1 and 1/4 c)

16 sheets phyllo dough, thawed

3/4 c butter, melted (equivalent to 1 and 1/2 sticks)

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Brush with butter a 9×13-inch baking pan.

Step 3: Place a skillet on the stove and turn the heat to medium.

Step 4: Add olive oil and allow it to become hot.

Step 5: Add the chopped onion and sauté until translucent.

Step 6: Squeeze the thawed spinach until most liquids are removed.

Step 7: Put the squeezed spinach into the skillet and stir until well mixed.

Step 8: Remove the skillet from the heat and allow the mixture to cool at room temperature.

Step 9: Add the egg, dill, parsley, egg, feta cheese, salt, and pepper into a medium mixing bowl. Stir until well mixed.

Step 10: Add the cooled spinach and stir until well combined.

Step 11: Place 1 thawed phyllo sheet onto the pan and brush the top with melted butter.

Step 12: Repeat the process until all eight phyllo sheets are arranged in layers.

Step 13: Put 1 sheet over the spinach mixture and brush melted butter on top. Repeat this process to the rest of the sheets.

Step 14: Slice into 18 even squares.

Step 15: Place them inside the preheated oven and bake for 45 minutes or until golden brown.

Step 16: Serve and enjoy!
