INGREDIENTS

1 tbsp olive oil

6 boneless skinless chicken thighs or breasts cut into 1-inch to 2-inch pieces

4 bell peppers, sliced (vary the colours to make it pretty!)

1 small onion, sliced

1 recipe of our: Copycat Taco Seasoning Mix, or 1 taco seasoning packet

1 c sour cream

4 ounces of cream cheese, softened

2 c cheddar cheese, grated

optional: garnish with avocado or guacamole, sour cream, salsa. For spicy lovers add heat with hot sauce.

INSTRUCTIONS

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: In olive oil, saute the chicken over medium heat until done. When done, take the chicken out of the skillet and set aside.

Step 3: In the same skillet, saute the onions and peppers until tender.

Step 4: Place chicken back into the pan and add in the taco seasoning, sour cream, and cream cheese. Stir until combined.

Step 5: Sprinkle the cheese over and place inside the preheated oven to bake for about 20 minutes or until the cheese is bubbly.

NOTES

To serve, top with avocado, guacamole, sour cream, and salsa. Enjoy!
