Overnight Oat Pancakes

Ingredients

3/4 cup whole wheat flour

3/4 cup oats

1 tsp. baking soda

1/2 tsp. salt

1 tbsp. sugar

1/2 cup nonfat plain yogurt

3/4 cup nonfat milk (regular, skim, almond, etc.)

2 eggs

Directions

Mix together all the ingredients and refrigerate overnight.

When ready to cook, heat a skillet or griddle over medium high heat. Spray with cooking spray.

Use 1/4 cup per pancake, pressing down with a spoon if needed.Cook until surface bubbles. Flip and finish cooking.
