INGREDIENTS
For the pork roast marinade:
60 ml ¼ cup soy sauce
240 ml 1 cup Coca-Cola
120 g ½ cup dark brown sugar
30 ml 2 tablespoons Dijon mustard
45 ml 3 tablespoons oil
30 ml 2 tablespoons Worcestershire sauce
80 ml 1/3 cup ketchup
2 cloves of garlic minced
15 g 1 tablespoon dry mustard
30 ml 2 tablespoons balsamic vinegar
1 teaspoon ginger
1 teaspoon crushed thyme
2.3 kg 5 pounds pork loin roast, boned
For the Coca-Cola Sauce:
200 g 1 cup brown sugar
15 g 1 tablespoon cornstarch
2.5 g ½ teaspoon dry mustard
28 g 2 tablespoons butter
80 ml 1/3 cup balsamic vinegar
160 ml 2/3 cup Coca-Cola
Sea salt and fresh ground pepper to taste
INSTRUCTIONS
Preheat your oven to 325°F (163°C).
In a mixing bowl, combine all the ingredients for the pork roast marinade. Stir until well blended.
Place the pork loin roast in a sturdy Ziploc bag, then pour the marinade over the roast. Seal the bag tightly and ensure the marinade is evenly distributed. Place the bag in a large bowl for added stability.
Refrigerate the marinating pork roast for 24 hours, allowing the flavors to permeate the meat and make it tender and flavorful.
After 24 hours, remove the bag from the refrigerator and separate the pork roast from the marinade. Discard the marinade.
Place the pork roast, fat side up, in a roasting pan and transfer it to the preheated oven. Slow roast the pork until it reaches an internal temperature of around 175°F (79°C). Avoid adding water or covering the pan.
Calculate the cooking time by allowing 30 minutes of roasting per pound of pork. For a 5-pound loin roast, you’ll roast it for approximately 2.5 to 3 hours.
Once the roast is done, remove it from the oven and transfer it to a platter. Cover the roast with a foil tent and let it rest for 15 minutes. This resting period will ensure a juicier pork roast when sliced.
Preparing the Sauce:
In a saucepan, combine all the ingredients for the Coca-Cola sauce. Place the pan over low heat and allow the sauce to simmer.
Stir the sauce continuously until it thickens to your desired consistency.
During the cooking process, use the sauce to glaze the roast, brushing it over the meat periodically.
Serve the pork roast slices with the remaining Coca-Cola sauce on the side, allowing everyone to enjoy the delightful flavors.
NOTES
For a smokier flavor, you can add a touch of liquid smoke to the marinade.
Experiment with different cuts of pork, such as pork tenderloin, for a variation in texture and cooking time.
