3 cups Cooked and Shredded Chicken approximately 360 g

16 oz. 450 g Cottage Cheese

1 teaspoon Salt

1 teaspoon Italian Seasoning

1/2 teaspoon Onion Powder

1/2 teaspoon Garlic Powder

1 1/2 cups Alfredo Sauce

1 1/2 cups Shredded Mozzarella Cheese

1 1/2 cups Shredded Parmesan Cheese

INSTRUCTIONS

Preheat your oven to 350°F (175°C). Grease a casserole dish and spread 1/4 cup of Alfredo sauce evenly on the bottom. Set aside.

Cook the lasagna noodles according to the package instructions. Once cooked, drain them and place them on a parchment paper-lined counter.

In a large bowl, combine the shredded chicken, cottage cheese, salt, Italian seasoning, onion powder, and garlic powder. Mix well until all the ingredients are thoroughly incorporated.

Take each lasagna noodle and spread approximately 3 ounces (85 g) of the chicken mixture evenly along the length of the noodle, leaving about 1/3 of the noodle bare. Drizzle 1-2 tablespoons of Alfredo sauce over the chicken mixture.

Gently roll up each lasagna noodle from one end to the other, creating a neat and compact roll-up. Place each roll-up into the prepared casserole dish, seam side down.

Pour the remaining Alfredo sauce over the top of the lasagna roll-ups, ensuring they are fully coated. Sprinkle the shredded mozzarella and parmesan cheese evenly over the sauce.

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and continue baking for an additional 10 minutes or until the cheese is melted, golden, and bubbling.

Once done, remove the dish from the oven and allow it to cool for a few minutes. Serve these heavenly Chicken Alfredo Lasagna Roll-Ups while they’re still warm and gooey.

NOTES

Feel free to substitute cooked rotisserie chicken or leftover roasted chicken for the shredded chicken in this recipe.

For a vegetarian version, replace the chicken with sautéed vegetables like mushrooms, spinach, or zucchini.

Experiment with different types of cheese, such as fontina or provolone, to add your own personal touch to the dish.

If you prefer a crispier cheese topping, broil the lasagna roll-ups for an additional 2-3 minutes after baking.
