HASH BROWN BREAKFAST CASSEROLE W/ BACON & SAUSAGE

This casserole is an amazing dish with hash brown, bacon, sausage, and loads of cheese. A great make-ahead dish for an easy and quick breakfast that’s also great for lunch, or even dinner.

INGREDIENTS

3 cloves Garlic, minced

1 small Onion, chopped

6 large Eggs

1/4 c (60 ml) Milk

3 slices Bacon, cut into 1/2-inch pieces

1/2 c (115 grams) Sour Cream

12 oz (340 grams) shredded Cheddar Cheese, divided (about 3 c.)

1/2 lb (227 grams) uncooked Sausage, removed from casings if needed

20 oz (567 grams) package of refrigerated Hash Browns

(optional toppings) chopped green onions or chopped parsley

1 Red Bell Pepper, diced

1/2 tsp (2.5 ml) Salt

1/4 tsp (1.25 ml) Black Pepper, or to taste

HOW TO MAKE HASH BROWN BREAKFAST CASSEROLE W/ BACON & SAUSAGE

Step 1: Prepare the oven. Preheat it to 375 degrees F. Ready a 9 x 13-inch baking dish. Grease and set aside. If using an oven-safe skillet, skip this step.

Step 2: Place the eggs, milk, sour cream, salt, and pepper in a large bowl. Whisk well until blended. Add most of the cheese (reserving around half a cup of cheese for topping) and whisk well until blended. Set aside.

Step 3: Place the bacon in a hot large 12-inch skillet over medium-high heat and cook until browned. Then, add the onions and garlic. Continue to cook for another minute until tender. Next, add the sausage and cook for additional 5 minutes until browned and completely cooked, breaking the sausage into small pieces as it cooks.

Step 4: Add the hash browns and red bell peppers to the skillet after the sausage has browned. Continue to cook for 5 minutes more or until the potatoes are a little browned.

Step 5: Mix the sausage/potato mixture with the egg mixture until combined. Pour this over the prepared baking dish and top with the reserved cheese. Using foil, tent the casserole dish and place it in the preheated oven. Bake for about 35 minutes. Uncover and resume baking for 25 minutes more or until the casserole is completely cooked and the cheese has melted. Give the casserole a gentle stir if it is not cooked through and bake for additional 10 minutes, uncovered.

Step 6: Remove from the oven when done and serve the casserole right away garnished with some green onion and minced parsley. Enjoy!
