6-8 cloves garlic minced

8 ounces thin rice noodles 1 MM or S

1 c. green onions, diced and divided (used about 2 bunches)

3 tbsp salted butter

3 tbsp soy sauce or tamari, or a gluten-free soy sauce

1-2 tbsp sugar coconut or light brown sugar (or use hoisin)

How to make 15 Minute Garlic Fried Noodles

Step 1: In almost boiling water, soak the rice noodles for about 4 minutes until al dente. Drain when done and rinse with cold water. Set aside.

Step 2: In a large skillet, melt the butter over medium to high heat. Once the butter has melted, add about 3/4 cup scallions to the skillet along with the garlic. Saute for about 1 to 2 minutes or until the garlic is aromatic.

Step 3: Then, add the sugar and stir well until blended. Next, add the soy sauce and allow everything to simmer for about a minute.

Step 4: To the skillet, add the noodles and continue to cook for another 5 to 7 minutes or until the noodles have fried and absorbed the sauce.

Step 5: Transfer on plates and garnish with some green onions and your preferred hot sauce or chilli garlic sauce. Serve and enjoy!

For this recipe, you can adjust the sweetness to your preference.

Swap coconut sugar with light brown sugar, hoisin, or honey.

To add extra flavour, use peanut oil or sesame seeds in place of butter.

Feel free to add shrimp, chicken, or pork.
