Nachos are one of my top favourites! I am in love with nachos for since I can remember. I have tried tons of nachos recipes, and these baked chicken nachos stand out. Just like the usual nachos, this recipe combined just a few simple ingredients, but what sets this apart is this is baked, making the layers more appealing, the flavours blend perfectly, and the gooey, hot cheese! I am obsessed with stringy, hot, melty, bubbly cheese. Top it all up with your favourite toppings, and these nachos just steal the show.
Nachos are not only a great appetizer, but they also make delicious, filling dinner. I know but stay with me for a bit. Nachos recipes are very versatile. They never have to be unhealthy. You can add some veggies to it, and never be afraid that your picky eaters will question you. Chips for dinner are okay because with this nachos recipe you’ll have everything (corn, black beans, fresh tender shredded chicken, peppers, guacamole, salsa, a little sour cream, and fresh green cilantro).
INGREDIENTS
2 c. shredded chicken
1 can black beans drained
16 ounces sharp cheddar cheese
1 can corn drained
1 bag tortilla chips
1 sweet bell pepper any colour
Topping:
sour cream
salsa
cilantro chopped
Guacamole
How to make Baked Chicken Nachos
Step 1: Using foil, line a large sheet pan. To the sheet pan, pour the bag of chips and spread them out.
Step 2: Over the nachos, sprinkle half of the cheese, then top them evenly with the black beans, corn, chopped pepper, and chicken. On top, spread the rest of the cheese.
Step 3: Bake the nachos in a preheated 425 degrees F oven for about 10 to 15 minutes or until the nachos are heated through and the cheese is just beginning to brown.
Step 4: When done, take the nachos out of the oven and top with your favourite toppings such as guacamole, salsa, sour cream, and fresh chopped cilantro. Serve right away. Enjoy!
NOTE:
You can easily double this nachos recipe by adjusting the ingredients accordingly.
