These chocolate oatmeal bars are a fantastic no-bake treat that you can whip up using only six ingredients. Enjoy rich chocolate and peanut flavours in one with this easy no-bake dessert. Beware these chocolate oatmeal bars are super addicting!

INGREDIENTS

3 c. rolled oats

1 c. butter

1 tsp vanilla extract

1/2 c. brown sugar packed

1/2 c. peanut butter

1 c. semisweet or dark chocolate chips

How to make No-Bake Chocolate Oatmeal Bars

Step 1: Using parchment paper, line an 8-inch or 9-inch square baking dish. Set aside. For easier lifting of the bars, make sure to overhang the edges of the foil. For thinner bars, you can use a 9 x 13-inch baking dish.

Step 2: In a large saucepan, melt the butter with brown sugar over medium heat. Stir in the vanilla once the butter has melted and the sugar has dissolved. Then, whisk in the oats. Cook for about 3 to 4 minutes over heat or until everything is well incorporated.

Step 3: Into the prepared baking dish, pour half of the oat mixture, evenly spreading it out and pressing down. Set the other half of the oat mixture for the second layer.

Step 4: For the filling, place the peanut butter and chocolate chips in a small microwave-safe bowl. Stir well until melted and the mixture is smooth.

Step 5: Over the crust, pour and evenly spread the chocolate mixture. Set aside about 1/4 c. for drizzling.

Step 6: Over the chocolate layer, pour the rest of the oat mixture. Press it gently on the layer and drizzle with the rest of the chocolate mixture.

Step 7: Place in the fridge for at least 2 to 3 hours or overnight. Before cutting into bars, bring the bars to room temperature.

Note:

Make sure to boil the sugar mixture just enough. Do not boil it too long or it will be dry and crumbly or under-boil it because the cookie/bars mixture will be turned out too soft.
