This casserole is made with chicken, cheddar, bacon, ranch, rice, cream of chicken soup, and milk combined and baked. A super easy casserole recipe that is ready on your dinner table in no time. If you love easy and quick recipes, then this cracked-out chicken and rice casserole is a must!

This casserole is not your ordinary casserole. It is packed with flavor and insanely delicious. It is a family-approved meal that everyone enjoys. Chicken, rice, cheddar, ranch, and do not forget the bacon! Anything with bacon is love!

For this recipe, you can use any leftover chicken. As for me, I use rotisserie chicken. I mix it with simple ingredients. If desired, you can add broccoli to the mix. I do sometimes whip up a complete meal in one. Or I simply serve this casserole with veggies on the side. A pro tip: Make sure to stir the rice halfway through baking, so the bottom does not burn.

Ingredients

¼ c. chopped cooked bacon

2 c. cooked chopped chicken

1 (1 ounce) packet dry Original Ranch dressing mix

1 (10.75 ounces) can cream of chicken soup

1 c. cheddar cheese

1 c. milk

¾ c. long grain rice (not instant)

HOW TO MAKE CRACKED OUT CHICKEN AND RICE CASSEROLE

Step 1: Prepare the oven. Preheat it to 375 degrees F. Using cooking spray, lightly grease a 9 x 9-inch pan.

Step 2: Mix all the ingredients and empty the contents into the prepared pan.

Step 3: Using foil, tent the casserole and place it in the preheated oven. Bake for about 35 to 40 minutes, stirring halfway through cooking time.

Notes:

For this casserole, I used rotisserie chicken.

Feel free to use low-fat chicken soup and milk.

I do not make the ranch dressing and only use the dry mix.

Adjust the amount of Ranch dressing mix according to taste.

For a gluten-free casserole, use gluten-free Cream of Chicken soup
