This French Onion Stuffed Pork Loin is seriously amazing! If you haven’t tried this recipe, you are already missing out!
Ingredients
ONIONS:
2 yellow onions, thinly sliced
3 tbsp butter
½ c. beef broth
PORK LOIN:
2 tbsp extra virgin olive oil
1 centre-cut pork loin, about 3 lbs.
2 c. shredded Gruyere cheese, divided
1 tsp Italian seasoning
1 tsp salt
1/4 tsp pepper
How to make French Onion Stuffed Pork Loin
Step 1: Prepare the oven. Preheat it to 450 degrees F.
ONIONS:
Step 2: Melt the butter in a large oven-safe skillet over medium-high heat.
Step 3: Once the butter has melted, add the onions and pour in the beef broth. Cook for about 15 to 20 minutes until the onions have browned and tender. To a bowl, transfer the cooked onion. Cover to keep it warm.
PORK LOIN:
Step 4: On a cutting board, lay the pork. Carefully make a lengthwise cut about 1/3 of the way from the bottom while holding the knife blade parallel to the board. Stop at about 1 inch from the opposite end. Make sure not to cut through the pork. Then, open the loin like a book.
Step 5: On the thick side of the pork loin, make a second cut horizontal with the first cut. Again, be very careful not to cut all the way through. Fold the opposite edge over to make 1 long cut of pork loin.
Step 6: With plastic wrap, cover the whole cut of meat and pound to an even 1/3-inch thickness.
Step 7: Place the oil, salt, pepper, and Italian seasoning in a small bowl. Mix well and rub this on the entire side of the pork loin.
Step 8: With half of the cooked onions and shredded cheese, top the pork loin. Then, roll the loin tightly to fully enclose the fillings. Tightly secure the roll using cooking twine.
Step 9: Add the pork loin in the same skillet and sear for about 5 minutes per side over medium heat. Flip the loin a total of 4 times.
Step 10: Place the skillet in the oven and bake the pork loin for about 25 to 30 minutes until the internal temperature of the meat reached 145 degrees F. Make sure to often baste the pork loin with the pan juices.
Step 11: Set the oven to broil. Add the rest of the cheese and onions on top of the pork loin and continue baking for another 5 minutes or until the cheese has melted and golden brown. Remove from the oven and slice. Serve right away garnished with some parsley. Enjoy!
