Find yourself cravings for spicy food? I have a very satisfying treat that I know everyone will love! These spicy vegan lentil cakes are not only incredibly delicious but super easy to throw together using only a few simple ingredients. These lentil cakes are protein-rich and have a spicy and smoky flavour that’s to die for! If you love veggie patties, these lentil cakes are a must-try!

Ingredients

oil, for frying

200 grams (1 c.) red lentils

4 tablespoons psyllium husks, or one large egg

1 medium onion, diced

2 bell peppers, I used one red and one yellow, chopped

4 tablespoons nutritional yeast flakes

about 60 grams (½ c.) flour of choice, I used some chickpea flour

2 teaspoons smoked paprika

1 small bunch of parsley, chopped

½ teaspoon chilli flakes

1 teaspoon spicy paprika

sea salt and ground pepper, to taste

How to make Spicy Vegan Lentil Cakes

Step 1: In a pot, add the lentils and cover with cover. Bring to a boil and cook the lentils for about 15 minutes. When done, remove from the heat and strain the lentils well. In a large bowl, transfer the lentils and mash with a fork or using a vertical blender. Next, add the remaining ingredients except for the oil.

Step 2: Mix until you have a sticky and easy-to-shape mixture. Add extra flour to the mixture if it turned out to be wet, and mix until you have a dough-like consistency. Or simply allow the mixture to rest for about 10 to 15 minutes in the fridge.

Step 3: Grease a non-stick pan with some oil. On the frying pan, lay each patty and fry for about 2 minutes per side until done.

Note:

You can keep the mixture in the fridge covered with plastic foil for up to 3 to 4 days.
