I love this meatball recipe. It is not only very easy and quick to make but these meatballs are also stuffed with mozzarella for that gooey bite. They are also perfect for anyone who’s on a low carb or keto diet!

Ingredients

Meatballs:

1 Egg

0.5-pound Lean ground beef

1 pound Lean ground pork

1 tablespoon Italian Seasoning

1 tablespoon fresh parsley, finely chopped

12 ounces mozzarella cheese, cut into small cubes

1 teaspoon salt

0.5 teaspoon ground black pepper

Sauce:

1/2 small onion, finely chopped

1 tablespoon olive oil

14 ounces crushed tomatoes, canned

1 tablespoon fresh parsley, or basil, finely chopped

1 clove of garlic, chopped

1 teaspoon black pepper

1 bay leaf

How to make Mozzarella Stuffed Meatballs (low carb, keto)

Marinara Sauce:

Step 1: To a pan, heat the olive oil over medium heat. Add the chopped onion to the hot oil and saute for about 5 minutes.

Step 2: Then, add the chopped garlic along with the canned crushed tomatoes, bay leaf, black pepper, and fresh parsley. Simmer everything for about 20 to 30 minutes over low heat while preparing the meatballs.

Meatballs:

Step 3: Prepare the oven. Preheat it to 400 degrees F.

Step 4: Using parchment paper, line a half sheet pan.

Step 5: In a large bowl, combine the meat with the egg and seasonings.

Step 6: Into the middle of a golf ball size of the meat mixture, place a piece of mozzarella. Shape the mixture into a ball around the cheese. Make sure to cover the cheese completely, leaving no gaps. Repeat to make about 12 meatballs.

Step 7: Place in the preheated oven and bake for about 15 to 20 minutes or until the meatballs are completely cooked.

Step 8: Remove from the oven when done and serve the meatballs right away with the homemade marinara sauce garnished with some fresh chopped parsley or basil. Enjoy!
