CHEESY GROUND BEEF QUESADILLAS

These quesadillas are filled with perfectly spiced beef, two different kinds of cheese, and black beans & red pepper. Super easy to throw together and ready in no time! Serve these tasty bulky folded cheesy ground beef quesadillas with your favourite side, such as fries/wedges for an impressive family meal!

Ingredients

2 tablespoons Olive Oil, or as needed

6 8-inch Flour Tortillas

Beef:

1/2 c./125ml Water or Low Sodium Beef Stock

1 pound/500 grams Lean Ground Beef

2 teaspoons each: Paprika, Cumin

1/2 teaspoon each: Onion Powder, Cayenne Pepper, Cornstarch/Cornflour

1 teaspoon each: Garlic Powder, Oregano, Salt

Olive Oil, as needed

1 heaped tablespoon Tomato Puree (Tomato Paste in the US)

1/4 teaspoon Black Pepper

Fillings:

1 small Red Pepper (bell pepper), finely diced

1.5 c./150 grams Cheddar, shredded

1 small White Onion, finely diced

1.5 c./150 grams Monterey Jack, shredded

1 c. Pickled Jalapenos, sliced (optional)

1/2 can Black Beans, rinsed

How to make Cheesy Ground Beef Quesadillas

Step 1: Place 2 tsp paprika, cumin, 1 tsp garlic powder, oregano, salt, 1/2 tsp onion powder, cayenne pepper, and 1/4 tsp black pepper in a small bowl. Mix well until blended and set aside.

Step 2: To a pan, heat the olive oil over medium heat. Once the oil is hot, add the onion and red pepper to the pan. Cook until tender and scrape to the outside of the pan. Then, add the beef and break the meat using a wooden spoon. Cook and stir with the rest of the ingredients until the meat is no longer pink. Stir in the spices.

Step 3: To the pan, add 1 tbsp tomato puree/paste and cook with the beef for a couple of minutes more. Pour in half a cup of water/low sodium beef stock. Deglaze the pan.

Step 4: Whisk half tsp cornstarch/cornflour with 2 to 3 tbsp liquid until well mixed. Stir this into the pan along with half a can of black beans. Let the mixture simmer for about 5 minutes, stirring often until reduced.

Step 5: Take the pan off the heat once the liquid in the pan is completely reduced and transfer the beef to a bowl. Set aside.

Step 6: Using a paper towel, wipe the pan out.

Step 7: Brush with oil the first side of the tortilla wraps. In the pan with the heat off, place one tortilla, oil-side down, and sprinkle with 1/4 c. cheese, half c. beef, then top with a couple of jalapenos and another 1/4 c. cheese. Fold the tortilla over. Repeat with the next tortilla. Now, switch on the heat and fry the tortillas for a couple of minutes on each side or until golden.
