Sandwiches are super fun to make. They are the most versatile, and I can make you varieties of sandwiches in a snap! But today, I am craving a fried egg-grilled cheese sandwich. This easy recipe has been my go-to. It is a pretty straightforward recipe that does not require any fancy ingredients. That is what I like best about sandwiches. They are very easy and quick to make.

I never leave the house without eating breakfast. Cliche as it might sound, I do believe that breakfast is the most important meal of the day. To jump-start my day I make my favourite sandwich and serve it with a cup of freshly brewed coffee.

Today, I’ve made three kinds of sandwiches. Two for my kid’s packed lunch and one for me. They eat their cereals while I devour my fried egg-grilled cheese sandwich. It’s breakfast in one with eggs, butter, and cheese sandwiched in slices of bread.

INGREDIENTS

Butter

4 eggs

Salt & Pepper

4 slices of bread, thick Texas-style

4 slices cheese, I used Colby Jack and pepper jack

How to make Fried Egg Grilled Cheese Sandwich

Step 1: Spread butter on each side of the bread pieces and set them aside.

Step 2: Melt a little butter in a frying pan over low heat. Add the eggs and fry to your desire. To taste, season with salt and pepper. Take the pan off the heat when the egg is done.

Step 3: Add a slice of bread to a different frying pan, buttered-side down. Top with a slice of Colby jack cheese, two fried eggs, a slice of pepper jack cheese, and the other piece of bread, buttered-side up.

Step 4: Put the lid on and cook the sandwich until the cheese has melted and both sides of the bread are golden brown.
