ROASTED GARLIC BUTTER PARMESAN POTATOES

Ingredients:

3 lbs (1.5 kg) baby red potatoes, washed and quartered

1/4 c (60ml) olive oil

6 large cloves of garlic finely chopped or minced

Salt and fresh cracked black pepper

1 tbsp Italian seasoning

3/4 c fresh grated Parmesan cheese

1/2 c unsalted butter

Fresh chopped parsley, for garnish

1/2 c crispy bacon bits (optional)

Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Apply cooking spray on a large baking sheet.

Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.

Add the baby red potatoes and cook for about 5 minutes or until fork-tender.

Add the herbs, olive oil, 1/4 cup of olive oil, Parmesan cheese, garlic, salt, and pepper into a large mixing bowl. Stir until well mixed.

Add more olive oil if needed.

Add the potatoes into the bowl with the mixture, then toss until well coated.

Transfer the potatoes onto the prepared baking sheet and arrange them evenly.

Place them inside the preheated oven and bake for about 25 minutes or until done. 15 minutes before the baking time ends, turn the potatoes to cook the other side.

Remove from the oven and allow them to cool at room temperature.

Place the butter inside the microwave, then heat until melted completely.

Add the chopped parsley and stir until well mixed.

Drizzle the mixture over the potatoes, then spread bacon bits as well. Toss everything until well combined.

Serve warm and enjoy!
