COUNTRY FRIED CHICKEN

This fried chicken recipe is superb! Oh, man, you have got to give this one a try, I’m telling you! Feel free to add more ingredients if you prefer. Enjoy!

Ingredients:

4 boneless skinless chicken breasts

1 ½ c vegetable oil

Buttermilk Marinade

2 cups buttermilk, see notes for substitutions

2 large eggs, whisked

3 tsp salt

Breading

1 ½ c all-purpose flour

½ c breadcrumbs, plain or Italian

2 ½ tsp seasoned salt

¾ tsp paprika

½ tsp cayenne pepper

1 ½ tsp black pepper

Directions:

Step 1: Wrap each chicken breast with saran.

Step 2: Pound the chicken breasts to 1/2-inch thick.

Step 3: Use paper towels to pat dry the chicken.

Step 4: In a mixing bowl, add buttermilk, eggs, and salt. Whisk until well mixed.

Step 5: Add the chicken breasts and allow them to marinate for about 1 to 2 hours or overnight.

To Cook:

Step 1: Coat the marinated chicken breasts with the breading mix.

Step 2: Place a skillet on the stove and turn the heat to 175 degrees C or 350 degrees F.

Step 3: Add enough oil to submerge the chicken breasts and allow them to become hot.

Step 4: Add the chicken breasts in batches and fry for 4 minutes on each side or until golden brown.

Step 5: Transfer the fried chicken onto a wire rack to cool completely.

Step 6: Repeat the process to the rest of the chicken breasts.

Step 7: Serve with gravy and mashed potatoes. Enjoy!
